“Breakfast is the most important meal of the day.” We hear this all the time, right? It’s true but breakfast is also the meal that a lot of people miss the most. I have to eat breakfast or I won’t be good for anybody. Without breakfast I am moody and lower functioning than usual. So, I try my hardest to eat something in the morning. Whether it is an apple, oatmeal or a breakfast bar I make sure I don’t skip it.

Eating breakfast was very difficult for me when I first became vegan because I absolutely loved “real breakfast food”. It was definitely a challenge but I was able to find easy go to meals that are tasty and could be made vegan as well. The best thing about my breakfast is that I can mix and match different ingredients to make it fun, exciting and tasty.

Quick Morning Breakfast Meals

Toast

Toast is one of the quickest meals to make in the morning. The good thing about toast is that you can literally put just about anything on it. You can dress it up or dress it down. You can add avocado as a spread with tomatoes and/or spinach. Not feeling savory? You can do peanut butter, bananas and a sprinkle cinnamon. The sky is the limit. So have fun with it!

 

Quick Morning Breakfast Meals

Mixed Berry and Banana Smoothie

I have fallen in love with smoothies and now they have been my go to for breakfast for a few weeks now. If you aren’t a big fruit person or even vegetable person you are able to get your intake with smoothies. My favorite smoothie to make is mixed berry and banana. What you will need is 1 cup of almond milk (or milk of your choice), 1 cup of mixed berries, ½ banana, 1 cup of spinach and a tablespoon of peanut butter. You can even add chia seeds to give it a texture.

Parfaits

I used to be a loyal fan of McDonald’s parfaits. Once I stopped eating out I didn’t think I’d ever find something close to theirs. Parfaits are like a burst of goodness. I like to add some “So Delicious” vanilla yogurt (vegan by the way), strawberries, blueberries and granola. I like parfaits because you can prep them for the week and they will still be good.

 

I think breakfast should be simple and easy to make. All of the meals above are and you can switch it up by using different recipes. The key is to worker smarter not harder. What are you go to breakfast meals?
